Wine making is a delicate process. To get the idea, below is a crash course on the steps of wine making:
Harvesting. First, you have to harvest the best grapes from the yield. It is vital to know that the sweetness and acidity of the grapes are in perfect balance because they come into play in the long run. So it all boils down to deciding the right moment to harvest.
Crushing. When you have sorted the choicest grapes, the next stage is to de-stem and crush them to produce its must (grape juice). In the past, winemakers used to crush grapes by feet. Today, crushing them mechanically ensures a more sanitary method.
Fermentation. After the crushing and pressing of grapes, fermentation follows. Adding either wild or cultured yeast (to convert sugar into alcohol), it usually takes a week to a month.
Clarification. Tannin (a bitter-tasting acid), proteins, and dead yeast must be removed from the fermented must, so clarification is the process of filtration and fining.
Ageing. The final stage is ageing or bottling. Most winemakers use oak barrels bottles, or stainless steel tanks. Usually, oak barrels are preferred to age red wine as it increases the oxygen exposure (to reduce further tannin and achieve the best flavor).
